fig martini & rosemary honey syrup



This Summer we've been getting creative with figs...  we put them on our waffles when we ran out of blueberries, roasted them on the grill, tossed them in pasta, & of course we ate them straight off the tree.  Last night we decided to make cocktails.

The first step in making this cocktail is to create a simple syrup.  If you've never made a simple syrup, here's your chance to learn.  This bit of knowledge will take your bar tending skills up a notch, and make you look like a pro.

Simple Syrup
Combine 1/4 cup water, 1/4 cup organic honey,  3 sprigs rosemary and bring to a boil.  Simmer for 5 mins. and then bring to room temp.  (If you live in Meridian, pick up a jar of Broke-T Honey form Earth's Bounty) 

Fig Cocktail
In a shaker, muddle two figs with 1/2 oz lemon juice & 3/4 oz honey.  Add 2 oz vodka and ice.  Strain into martini glass and garnish with a sprig of rosemary.  

This cocktail packs a punch, but you can always add more of the honey syrup if needed, or garnish with a lemon slice if you prefer it more tangy .
